Wacky Cake


My mom found this recipe and wanted to try it out for Mother’s Day. It was a delicious cake and SO EASY!!

Ingredients:
·         3 C. flour
·         2 C. sugar
·         6 T. cocoa
·         2 tsp. baking soda
·         1 tsp. salt
·         2/3 C. melted butter
·         2 T. vinegar
·         2 C. water

Icing:
·         4 T. cocoa
·         1 Stick butter
·         1 Box powdered sugar (equivalent to 2 C.)
·         1 tsp. vanilla

Mix the first 5 ingredients together.


Melt the butter:
Add water, butter, and vinegar. Mix only until blended, batter will be thin.  


 Poor into lightly greased 13X9 pan, or 2 8X8 pans.


Bake at 325 degrees F. for about 30 minutes, or until tester comes out clean. I ended up cooking mine for 40 minutes.


Icing:
Bring cocoa, butter and milk to a boil.






Add powdered sugar and vanilla. Beat well and pour over hot cake.

Oatmeal Pancakes

I used this recipe to use up some buttermilk and absolutely loved this recipe!!!
Ingredients needed:
1 1/2 C. rolled oats
2 C. buttermilk
2 eggs
1 t. vanilla
2 T. brown sugar
1/4 C. canola oil (I used yogurt instead)
1/2 C. flour
1/2 t. baking soda
1/2 t. salt
1/4 t. nutmeg
Combine the oats and buttermilk for 20 minutes.
Meanwhile, in a separate bowl, whisk together eggs, vanilla, sugar, and oil in a large bowl.
Combine flour, baking soda, salt, and nutmeg in another.

Add soaked oats and dry mixture to the wet mixture.
Over medium-heat on a frying pan, pour 1/4 C. of the batter for each pancake. Cook slowly until holes cover the top.
Flip to cook other side.
Serve with syrup, or as I like to do...with yogurt!

Chewy Cocoa Brownies

A favorite dessert that I love to make. Very simple and easy (and hard to mess up!).
For this recipe you will need:
  • 1 2/3 C. Granulated Sugar
  • 3/4 C. (1.5 sticks) Butter or margarine, melted
  • 2 Tablespoons Water
  • 2 Eggs
  • 2 teaspoons Vanilla extract
  • 1 1/3 C. All-purpose flour
  • 3/4 C. Baking cocoa
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 3/4 C. Chopped nuts (optional)
Stir together sugar, butter and water in large bowl.

Stir in eggs; stir in vanilla.


Combine flour, cocoa, baking powder and salt; stir into sugar mixture. Stir in nuts. (If you forget to combine the dry ingredients before adding them into the wet mixture don't worry they will still turn out. You will need to take a blender and blend the mixture to make sure that all lumps are out of the mixture.)

Spread into greased 13X9 inch baking pan.
Bake in preheated 350 F. oven for 18-25 minutes or until wooden pick inserted in center comes out slightly sticky. Cool in pan.


This recipe is so good that I forgot to snap a quick picture of the finished product. Maybe I should make it again just to get the photo!

Banana Cake Bread

This recipe is a favorite and we are hardly able to keep it on the table for two nights!
For this recipe you will need:
  • 1/2 C. Shortening
  • 2 C. Sugar
  • 3 Eggs
  • 3 Tablespoons Buttermilk
  • 2 C. Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • 4 Bananas
  • 1 C. Nuts (optional)
Cream together the shortening and sugar. Add the eggs and buttermilk.
In a blender puree the bananas.
Combine the flour, salt, baking soda, and vanilla into the shortening and sugar.
Add the pureed bananas.
Pour batter into greased bread pans. We use 4-5 small bread pans.
Bake at 350 degrees F. for 25-30 minutes.
Enjoy warm with cool whip, ice cream, or by itself!

I have chosen to switch sites to continue my cooking blog. I am still going to post the usual pictures and directions with my comments on the recipes. I will just be using Blogger instead of WordPress. I will gradually post the old recipes, along with some new recipes that I have ready to be updated :).
